    Crispy Air Fryer Potato Wedges

    These are the best air fryer potato wedges! Nice and crispy on the outside yet tender on the inside, they are perfectly seasoned and are so easy and simple to make. They're made with pantry staples like Italian seasoning and olive oil and only take 20 minutes to cook.

    Why you will love this recipe:

    • The taste and texture! These air-fried potato wedges are extra crispy on the outside yet warm, soft and tender on the inside. They have a great flavour and are perfectly seasoned with Italian seasoning, salt and pepper.
    • These potato slices are so quick and easy to make and they only take 20 minutes to cook. Plus there is no need to boil the potatoes or parboil the potatoes first.
    • These potatoes make great leftovers so they are great for meal prep. 
    • You can change up the seasonings to give them flavour that you prefer.
    • This potato recipe is healthy, gluten free, dairy free, sugar free, vegan, and Whole30 compliant. Since they aren't deep fried they are healthier than regular fries which are made by deep frying.

    Ingredients and substitutions:

    • Russet potatoes - these are my favourite type of potatoes for making extra crisp air fryer potato wedges, but you could also swap these for another type of potato such as Yukon gold potatoes, depending on what you have on hand. 
    • Olive oil or avocado oil - to help give the skin on these air fried potatoes that nice crisp texture. I don't recommend trying to make these potatoes oil free, they just don't crisp up enough when they cook.
    • Seasonings - I use Italian seasoning, sea salt, and ground black pepper but you could also change these up to give them the flavour you prefer. Other great options include everything but the bagel seasoning, rosemary, paprika, onion powder, garlic powder, chili powder, greek seasoning or lemon pepper seasoning. 

    How to make (step-by-step):

    Step one:

    First, wash and dry the potatoes (you can use paper towels or tea towel to do this) and then cut the potatoes into wedges on a cutting board.

    Step two:

    Next, place the potato wedges in a large bowl full of ice water and let them soak for 30 minutes. Then drain the water and dry the sliced potatoes.

    Step three:

    In a large mixing bowl, combine the potato wedges, oil, and spices and toss until the potatoes are evenly coated.

    Step four:

    Finally, place the seasoned potato wedges on the tray of your air fryer or in the basket and bake at 400 degrees Fahrenheit for 17-20 minutes.

    Top tips: 

    • Every model of air fryer is different so you may have to adjust the cooking time depending on the type of air fryer you use.
    • Try to cut the potatoes into similar size wedges. This is the best way to ensure they cook at the same rate.
    • If you have a smaller air fryer you will need to cook the wedges in batches. 
    • Depending on the size of your potato wedges you may need to adjust the cooking time. Smaller cut potatoes will take less time while larger wedges will take longer. 
    • Don't overlap the potato wedges when you cook them or they won't cook properly. For better results be sure to put them in a single layer.
    • If you skip the soaking in cold water step the air-fried wedges won't turn out as crisp so I don't recommend trying to do that.
    • I do not preheat the air fryer for this recipe. If you do preheat your air fryer, decrease the cooking time by a few minutes. 
    • If you are using a basket style air fryer, be sure to give the basket a shake half way through to ensure the potatoes cook evenly on all sides.

    Recipe variations:

    • Feel free to change up the seasonings or spices on these potatoes. Other options include dill, chili spice, cayenne pepper, cajun seasoning, another seasoning blend, spice blend or seasoning salt. 

    How to serve:

    You can serve potato wedges plain or with your favourite dipping sauce such as ketchup, sour cream, healthy mayonnaise, creamy aioli, hot sauce, honey mustard, or the best bbq sauce.

    These crispy potato wedges make a great side dish and pair well with burgers, easy turkey burgers, veggie burgers, pork chops, herbed lamb chops, chicken tenders, or crispy chicken wings. 

    You can also serve these potatoes for breakfast and they pair well with eggs, bacon or juicy sausages.

    How to store:

    Store any leftover potato wedges in an airtight container in the fridge for up to 7 days. 

    How to reheat:

    To reheat potato wedges in an air fryer, preheat the air fryer to 370 degrees Fahrenheit and then cook the potatoes for 3-4 minutes, until hot and crispy.

    Frequently asked questions:

    Why do you soak potatoes in water before air frying?

    This ensures that the potatoes turn out nice and crispy and also helps prevent the wedges or fries from sticking together when they cook.

    Can I make these potatoes without oil?

    I do not recommend trying to make these air fried potatoes without oil. They don't get nearly as crispy.

    Can I cook these potatoes without soaking them first?

    I don't recommend skipping the soaking step. This is one of the secrets to getting the crispiest potato wedges possible.

    Are potatoes paleo?

    Technically no. When first created, white potatoes were not allowed on the paleo diet. However, since the Whole30 program started allowing white potatoes, many paleo experts have started to allow white potatoes as well. My rule of thumb is to listen to your body and eat the foods that work for you.

    Do I need to preheat my air fryer?

    For this air fryer recipe you do not need to preheat your air fryer. If you do choose to pre-heat it, reduce the cooking time by a few minutes.
