These crispy air fryer potato wedges are the best! They have the perfect crispy texture with crispy skin on the outside while the inside is soft, moist and tender. The spices give them a delicious Italian flavour so they are not at all spicy.
Ingredients and substitutions:
You should be able to find all of these simple ingredients at your local grocery store. For the exact measurements refer to the recipe card at the bottom of the post.
- Russet potatoes - these are my favourite type of potatoes for making extra crisp air fryer potato wedges, but you could also swap these for other another type of potato such as Yukon gold potatoes, depending on what you have on hand.
- Olive oil or avocado oil - to help give the skin on these air fried potatoes that nice crisp texture. I don't recommend trying to make these potatoes oil free, they just don't crisp up enough when they cook.
- Seasonings - I use Italian seasoning, sea salt, and black pepper but you could also change these up to give them the flavour you prefer. Other great options include everything but the bagel seasoning, rosemary, paprika, onion powder, garlic powder, chili powder, greek seasoning or lemon pepper seasoning.
How to make:
Step one:
First, wash and dry the potatoes (you can use paper towels or tea towel to do this) and then using a sharp knife cut the potatoes into wedges on a cutting board.
Step two:
Next, place the potato wedges in a large bowl full of ice water and let them soak for 30 minutes. Then drain the water and dry the sliced potatoes.
Step three:
In a large mixing bowl, combine the potato wedges, oil, and spices and toss until the potatoes are evenly coated.
Step four:
Finally, place the seasoned potato wedges on the tray of your air fryer or in the basket and bake at 400 degrees Fahrenheit for 17-20 minutes.
Tips and variations:
- Every model of air fryer is different so you may have to adjust the cooking time depending on the type of air fryer you use to get the perfect potato wedges.
- Try to cut the potatoes into similar size wedges. This is the best way to ensure they they cook at the same rate.
- If you have a smaller air fryer you will need to cook the wedges in batches.
- Depending on the size of your potato wedges you may need to adjust the cooking time. Smaller cut potatoes will take less time while larger wedges will take longer.
- Don't overlap the potato wedges when you cook them or they won't cook properly. For better results be sure to put them in a single layer to get the most crispy potatoes possible.
- If you skip the soaking in cold water step the air-fried wedges won't turn out as crisp.
- I do not preheat the air fryer for this recipe. If you do preheat your air fryer, decrease the cooking time by a few minutes.
- Feel free to change up the seasonings or spices on these potatoes. Other delicious options include dill, chili spice, cayenne pepper, cajun seasoning, another seasoning blend, spice blend or seasoning salt.
- If you are using a basket style air fryer, be sure to give the basket a shake, or flip the potatoes half way through to ensure they cook evenly on all sides.
How to serve:
Serve potato wedges with your favorite dipping sauce including ketchup, sour cream, mayonnaise, aioli, hot sauce, honey mustard, or bbq sauce.
These crispy potato wedges also pair really well with burgers, turkey burgers, veggie burgers, pork chops, lamb chops, chicken tenders, or chicken wings.
This easy side dish is also great to serve for breakfast and pairs really well with eggs, bacon and sausages. I love topping them with a little fresh parsley before serving with breakfast.

To reheat potato wedges in an air fryer, preheat the air fryer to 370 degrees Fahrenheit and then cook the potatoes for 3-4 minutes, until hot and crispy.
