Air fryer potato wedges are the best side dish. Nice and crisp on the outside yet tender on the inside, they are perfectly seasoned and are so easy to make. They’re made with pantry staples like Italian seasoning and olive oil and only take 20 minutes to cook.

Ingredients and substitutions: 

  • Russet potatoes – these are my favourite type of potatoes for making potato wedges in air fryer but you could also swap these for other another type of potato depending on what you have on hand. 
  • Olive oil or avocado oil – to help give the skin on these potatoes that nice crisp texture. 
  • Seasonings – I use Italian seasoning, salt and pepper but you could also change these up to give them the flavour you prefer. 

How to make this recipe: 

Step one:

First, wash and dry the potatoes and then cut the potatoes into wedges.

Step two:

Next, place the potato wedges in a bowl of ice water and let them soak for 30 minutes. Then drain the water and dry the sliced potatoes.

Step three:

In a large bowl, combine the potato wedges, oil, and spices and toss until the potatoes are evenly coated.

Step four:

Finally, place the potato wedges on the tray of your air fryer or in the basket and bake at 400F for 17-20 minutes.

Chef’s tips: 

  • Every model of air fryer is different so you may have to adjust the cooking time depending on the model you use. 
  • Depending on the size of your potato wedges you may need to adjust the cooking time.
  • Don’t overlap the potato wedges when you cook them or they won’t cook properly.
  • If you skip the soaking step they won’t turn out as crisp.
  • Feel free to change up the seasonings or spices on these potatoes. Other delicious options include dill, chili spice, or seasoning salt. 
  • Store these potato wedges in the fridge in an air tight container for up to 5 days.
  • To reheat these potato wedges: put them in the air fryer for 2-4 minutes at 350F.

Why do you soak potatoes in water before air frying?

This ensures that the potatoes turn out nice and crispy and also helps prevent the wedges or fries from sticking together.

Are air fried potatoes healthy?

Yes! They use much less oil when compared to deep fried potatoes and are lower in calories and fat compared to deep fried French fries or potato wedges.

How long does it take for wedges to cook in the air fryer? 

It takes 17-20 minutes to cook wedges in the air fryer at 400 degrees Fahrenheit. 

How long should you soak potatoes before air frying?

If you soak potatoes for 30 minutes in an ice bath before air frying they will turn out perfect and crispy.

These potato wedges in the air fryer turn out nice and crisp on the outside, yet soft and tender on the inside. They're perfectly seasoned and so easy to make!

Ingredients

  • 750 grams Russet potatoes (~3-4 potatoes depending on their size)
  • 2 tbsp avocado oil or olive oil
  • 1 tbsp Italian seasoning
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions

  1. Wash and dry the potatoes. Then cut them into wedges.

  2. Place the potato wedges in a bowl of ice water for 30 minutes. Then drain the water and dry the potatoes.
