    These are the best edible no bake cookie dough bites! This healthy treat is so easy to make and is the perfect option when you want a quick dessert because it's ready in under 5 minutes. This no bake dessert is also gluten-free and dairy-free and can be made vegan too!

    I love no bake desserts like peanut butter fudge, chocolate almond butter bars, chocolate orange energy balls, peanut butter and chocolate Rice Krispie treats and key lime pie popsicles because they are so easy to make, which is why I am so excited for you to try the dessert recipe I am sharing with you today.

    Why you will love this recipe:

    • These chocolate chip cookie dough bites are so easy to make and are ready in just 5 minutes. Just like my peanut butter bliss balls and gluten-free chocolate mug cake.
    • The taste! These cookie dough bites taste like classic chocolate chip cookie dough.
    • This cookie dough is safe to eat raw since it's made with no eggs. It is also gluten-free, dairy-free, refined sugar free, paleo, and can easily be made vegan.
    • These cookie dough balls are made in one bowl so the clean up is so simple and easy. 
    • You don't need any fancy tools or equipment to make them - just a bowl and a spoon!
    • They store well so you can have a quick ready-to-eat treat on hand for days after you make them.

    The ingredients needed to make no bake chocolate chip cookie dough bites separated into bowls including almond flour, chocolate chips, cashew butter, maple syrup and vanilla extract.
    • Almond flour - be sure to use almond flour and not almond meal as almond meal is too gritty. Do not try swapping the almond flour for all purpose flour. 
    • Coconut flour - this gives this treat even more sweet flavour and the perfect cookie dough texture. Do not try to swap this for a different flour. 
    • Nut butter - you can use any type of smooth, unsweetened nut butter that you prefer. I like using either cashew butter or peanut butter but other great options include almond butter or sunflower seed butter.
    • Maple syrup or honey - either of these two natural liquid sweeteners can be used to sweeten this dessert. Both of these sweeteners are refined sugar free which is why I prefer them. If you are vegan be sure to use maple syrup rather than honey.
    • Coconut oil - this is used instead of butter to add some oil to these cookie dough balls and make them even more moist.
    • Chocolate chips - you can use any type of chocolate chips that you like. I prefer to use dark chocolate chips but other options include semi-sweet chocolate chips, milk chocolate chips or mini chocolate chips.  

    Recipe variations and add ins:

    • If you are serving a crowd or want leftovers for meal prep feel free to make a double or triple batch.
    • To make these cookie dough bites vegan: use vegan chocolate chips and maple syrup instead of honey to sweeten.
    • To make this cookie dough recipe dairy-free: use dairy-free chocolate chips.
    • To give these cookie dough bites more texture you could add chopped nuts such as pecans or walnuts or shredded coconut.
    • To change the flavour you could swap the chocolate chips for other ingredients such as oatmeal and raisins, cacao nibs, toffee pieces, or M&M's.

    How to make no bake cookie dough bites:

    1. Step 1: First, place all the ingredients, except the chocolate chips, into a large bowl.

    1. Step 2: Now stir everything well until you have a smooth dough.

    1. Step 3: Next stir in the chocolate chips.

    1. Step 4: Lastly, using your hands, form the raw dough into 1-inch balls. Then enjoy!

    Top Tips:

    • Be sure to stir the ingredients well so that you have a smooth cookie dough with no clumps remaining before adding the chocolate chips.
    • For best results be sure to use melted coconut oil rather than solid coconut oil. 
    • These edible cookie dough balls are delicious served as is but you could also use them to top cupcakes or cakes, to add to ice cream, blend into milkshakes, or coat them in melted chocolate to make chocolate cookie dough truffles.

    How to store:

    Store this edible chocolate chip cookie dough in an airtight container in the fridge for up to 7 days. It also freezes really well. To freeze them put them in a freezer-safe container or freezer bag and store them in the freezer for up to 3 months.

    Is this cookie dough recipe keto?

    No it is not.

    Can I swap the coconut flour for another flour?

    No. I have not tried any flour swaps for the coconut flour and don't think they would turn out.

    Can I swap the almond flour for another flour?

    I would recommend cashew flour if you can't have almond flour.

    Is this cookie dough paleo?

    You can make it paleo by using a nut or seed butter other than peanut butter and using dairy free and soy free chocolate chips.

    Can I bake this cookie dough?

    I have not tried baking this cookie dough so I am not sure if it would turn out if you tried it.

    • 1 cup almond flour
    • 1/4 cup plus 1 tablespoon coconut flour
    • 1/4 cup maple syrup or honey
    • 1/4 cup cashew butter
    • 2 tablespoon melted coconut oil

    Instructions
