    These are the best key lime pie popsicles! They are so easy to make and taste just like a key lime pie but are with made healthy ingredients like hidden spinach and are refined sugar free. They are the perfect refreshing summer treat.

    Popsicles are one of the best summer treats. They are so refreshing and one of the nice things about making them yourself is that you can make them healthier and lower in sugar than the typical store bought ones. You have all been loving my dairy free strawberry popsicles, dairy free chocolate avocado popsicles and healthy vanilla popsicles so I know you will love this popsicle recipe too!

    Why you will love these popsicles:

    • The flavour! These popsicles taste just like a key lime pie. They are so light and refreshing.
    • They are so easy to make and only take a few minutes to prepare.
    • They are healthy and are packed with hidden veggies. They are also refined sugar free and lower in sugar compared to most other key lime pie popsicle recipes since they are made without condensed milk.
    • These popsicles can easily be made dairy-free, gluten-free, paleo and vegan.

    The ingredients needed to make key lime pie popsicles separated into bowls including lime juice, lime zest, yogurt, spinach, coconut milk and maple syrup.
    • Full fat coconut milk - to help give these popsicles the perfect melt in your mouth creamy texture and nice sweet flavour. Be sure to use full fat coconut milk and not low fat which is too watery.
    • Plain yogurt - to help balance out the sweetness of this treat and give it a nice creamy texture.
    • Key limes - these are used for both the lime juice and lime zest. If you can't find key limes regular limes will also work.
    • Maple syrup - to naturally sweeten this summer treat while keeping these popsicles refined sugar free.
    • Coconut oil - this helps the popsicles harden to give them the perfect texture when they freeze.
    • Spinach - this gives these popsicles their gorgeous green colour and also add veggies to this dessert.
    • Graham cracker crumbs - these are optional but if you want to give these popsicles a graham cracker crust you will use these for that. If you are gluten-free be sure to use gluten-free graham cracker crumbs.
    • Coconut sugar - this is another optional ingredient that is used to sweeten the graham cracker crust if you make it. Instead of coconut sugar you could use brown sugar.

    Recipe variations and add ins:

    • Instead of full fat coconut milk you could use coconut cream, plain coconut yogurt or plain greek yogurt to make these key lime pie popsicles.
    • To make these popsicles dairy-free or vegan: use a dairy-free yogurt. I like plain coconut yogurt the best.
    • To make higher in protein: use plain greek yogurt, add 3 tablespoon of hemp seeds and 4 tablespoon of collagen peptides to the recipe.
    • To make these popsicles paleo: omit the graham cracker crust and use a dairy-free yogurt.
    • The graham cracker crust is optional. Simply omit it if you don't want it.

    How to make key lime pie popsicles:

    1. Step 1: Place the popsicle ingredients into a blender and blend them well until smooth.

    1. Step 2: Transfer the blended ingredients to a popsicle mold and fill each mold until it's 3/4 of the way full.

    1. Step 3: If adding the graham cracker crust, stir the crust ingredients together in a bowl and then transfer the graham cracker crust mixture to the top of each popsicle mold. Press the crumbs down lightly. If not adding the crust, go to the next step.

    1. Step 4: Top the popsicle mold with the lid and add the popsicle sticks. Then freeze the mold for at least 4 hours to harden the popsicles. Then serve and enjoy!

    Top Tips:

    • Try to freeze these popsicles as soon as possible after you assemble them. If you let them sit too long the graham cracker crust may sink to the bottom of the popsicle.
    • Be sure to freeze these popsicles for at least 4 hours.
    • Run the outside of the popsicle mold under hot water for about a minute before removing the popsicles from the mold to make them easier to remove.

    Are these key lime pie popsicles vegan?

    As long as you use a dairy-free yogurt then yes they are.

    Can I make these key lime popsicles with condensed milk?

    I do not recommend it as condensed milk is too sweet and is not refined sugar free.

    How should I store these popsicles?

    Store these popsicles in the freezer in the popsicle mold for up to 3 months.

    These key lime pie popsicles are about to become your new favourite summer treat. These healthy popsicles are so refreshing and have the best flavour!

    • Popsicle mold
    • Vitamix blender
    • Large bowl

    Ingredients

    Popsicle Ingredients

    • 1 cup full fat plain yogurt
    • 1 cup full fat coconut milk
    • 1/2 cup lime juice
    • 1/2 cup maple syrup
    • 1/4 cup melted coconut oil
    • 3 handfuls spinach
    • 2 tablespoon lime zest

    Crust Ingredients (optional)

    • 3/4 cup crushed graham crackers
    • 3 tablespoon coconut sugar
    • 3 tablespoon melted coconut oil

    Instructions

    • If you are going to add the crust, stir the crust ingredients together in a bowl and set this aside.
    • Place the popsicle ingredients into a blender and blend them well until smooth.
    • Transfer the popsicle ingredients to a popsicle mold and fill each mold until it's 3/4 of the way full.
    • Spoon in the graham cracker crust mix to finish filling each mold. Press the crumbs down slightly.
    • Top the popsicle mold with its lid and add the popsicle sticks.
    • Freeze the popsicles for at least 4 hours.
