- Mini marshmallows - I recommend using fresh mini marshmallows rather than large marshmallows to make this no-bake treat.
- Smooth peanut butter - be sure to use smooth, unsweetened peanut butter or natural peanut butter to make these dessert bars.
- Dark chocolate - this is used for the chocolate topping on these bars. You can use dark chocolate bars, dark chocolate chips, or semi-sweet chocolate chips to make the chocolate layer. If you prefer milk chocolate you can use that instead.
- Butter or coconut oil - either of these oils can be used to help melt the marshmallows and make them extra gooey.
Recipe variations and add ins:
- To make gluten-free: use gluten-free Rice Krispies or another gluten-free rice crisps cereal.
- To make peanut free: swap the peanut butter for another smooth, unsweetened nut butter or seed butter such as almond butter, cashew butter or sunflower seed butter.
- To make these Rice Krispie treats vegan: use coconut oil or a vegan butter, vegan marshmallows, a vegan rice cereal and vegan chocolate.

How to make peanut butter and chocolate rice krispie treats:
Step 1: Line an 8 inch square pan with parchment paper and using a large pot on the stove top over low heat, melt the coconut oil or butter.
Step 2: Once the butter or coconut oil has melted, add the marshmallows to the pot and heat, until the marshmallows are melted. Be sure to stir frequently so the marshmallows don't burn or stick to the bottom of the pot.
Step 3: When the marshmallows are all melted turn off the heat and stir in the peanut butter.
Step 4: Then fold the cereal into the marshmallow mixture.
Step 5: Transfer the cereal mixture to the prepared pan. Gently spread the mixture to fit the pan and press it down lightly so you have an even layer.
Step 6: Put the chocolate in a microwave-safe bowl or dish, and heat it on high for 30-second intervals until melted.
Step 7: Next pour the melted chocolate over the Rice Krispie treats and then transfer the pan to the fridge for 45 minutes to let the chocolate harden, or let them set for 2 hours at room temperature instead.
