Why you will love this recipe:

    • These air fried diced potatoes turn out so good! Nice and crispy on the outside, yet soft and tender on the inside.
    • They are so easy to make! It only takes 25 minutes to cook them which is so much faster than roasting potatoes in the oven.
    • This potato recipe is healthy, gluten free, dairy free, vegan, vegetarian and Whole30 compliant, just like air fryer turnip fries, air fried spaghetti squash and air fryer broccoli.
    • Move over air fryer hash browns, these potatoes are the perfect air fryer breakfast potatoes.

If you love fried potatoes you will also love southern fried potatoes and air fryer baked potatoes.

    Ingredients and substitutions:

For the full ingredient list and exact measurements refer to the recipe card later in this post.

    Jump to the Recipe Card.
    • Potatoes - any type of potato will work for this recipe, I have used Russet, red potatoes and gold potatoes and all have worked out great.
    • Avocado oil - to help get that nice, crispy skin! If you don't have avocado oil you can use olive oil instead.
    • Italian seasoning - to give these potatoes the most incredible flavour.
    • Salt and pepper - these simple seasonings help give these cubed potatoes even more flavour.

    Recipe variations and add ins:

    • Feel free to change up the spices on these potatoes to give them the taste you prefer. Other fun options include Greek seasoning, cajun seasoning, sea salt, everything but the bagel seasoning or even taco seasoning.
    • If you prefer to peel your potatoes you can, but this will add more prep time to this recipe and will decrease the nutritional value of the potatoes (the peel or skin is where most of the vitamins, minerals, fiber and antioxidants are).

How to make air fryer diced potatoes:

A cutting board with diced potatoes on it.

    Step 1

Wash and dry the potatoes and then cut them into bite sized pieces.

A bowl filled with diced potatoes topped with spices and with a spoon in the bowl.

    Step 2

Transfer the diced, cubed potatoes to a bowl and add the avocado oil and spices. Toss everything until the potatoes are evenly coated in the oil and spices.

Seasoned, diced potatoes on the rack of an air fryer.

    Step 3

Transfer the chopped potatoes to your air fryer (either the trays or basket). Then cook them for 25 minutes at 400 degrees Fahrenheit, rotating the racks or shaking the basket half way through to ensure the potatoes cook evenly.

    Top tips:

    • Every model of air fryer is different, so you may have to adjust the cooking time if you are using a different model than I do.
    • For this air fryer recipe you do not need to preheat your air fryer. If you do preheat it, reduce the cook time by a few minutes.
    • Depending on how small you chop your potatoes, you may need to adjust the cooking time (smaller potatoes will cook more quickly).
    • Try not to overlap the potatoes when they are in the air fryer or they won’t cook as well. They turn out more crispy if there is space around the potatoes when they cook.
    • Depending on how big your air fryer is you may have to cook these potatoes in batches.
    • Serving ideas: I love serving these crispy potatoes with bacon, air fryer Italian sausages, eggs, pork chops, the best air fryer turkey burgers, steak bavette, air fried lamb chops or even adding them to salads.

    Air fryer diced potatoes FAQs:

Do I need to soak the potatoes before air frying them?

    No you do not.

Do I have to peel the potatoes for this recipe?

No you do not. That's one of the reasons why it's so quick and easy!

    Are these potatoes gluten free?

    Yes!

How should I store these potatoes once they've been cooked?

Store any leftover potatoes in the fridge in an airtight container for up to 5 days.

Can I reheat potatoes in the air fryer?

Yes, to reheat any leftover diced potatoes preheat your air fryer to 350 degrees Fahrenheit, then place the potatoes in a single layer in your air fryer and cook them for 3-5 minutes, until they are warm.
