    How to Make the Perfect Over Medium Eggs (so easy!)

    You are going to love this over-medium eggs recipe! It is so easy to make and these fried eggs only take 5 minutes to cook! The yolks turn out slightly runny and slightly firm to give them the perfect texture.

    What are over medium eggs?

    Over medium eggs are fried eggs where the yolk is slightly firm, yet still a little runny.

    When looking at fried eggs there are different ways you can prepare them. Over-easy eggs are fried eggs where the yolk is runny, over medium eggs are fried eggs where the yolk is a little runny, over hard eggs are fried eggs with fully cooked yolks, and sunny-side-up eggs are fried until the yolk is runny, but they are not flipped. 

    Why you will love these eggs:

    • They are so quick, simple and easy to make! It only takes 5 minutes to make these eggs!
    • You only need 2 ingredients for this fried egg recipe.
    • The yolks are slightly firm and slightly runny - so if you don't like fully cooked yolks or really runny yolks you will love these eggs.
    • These eggs are delicious eaten on their own but you can also use them to make sandwiches, breakfast burritos or to top burgers, avocado toast or salads. 

    If you prefer eggs with fully cooked yolks then I recommend making over hard eggs or microwave hard boiled eggs instead. And if you love egg recipes then you need to try my gluten free quiche.

    Ingredients:

    The ingredients needed to make over medium eggs separated into small bowls.
    • Eggs - I recommend using fresh eggs for the best results. You can use any size of eggs that you prefer (I use large eggs). I like using free range eggs but you can use any type of eggs that you have.
    • Coconut oil - coconut oil is used to help fry these eggs and prevent them from sticking to your pan. Instead of coconut oil you can use any other type of oil or fat that you prefer such as butter, ghee, bacon grease or bacon fat, olive oil or avocado oil.

    How to make (step-by-step):

    Step one:

    First, place a large frying pan on the stovetop over low heat and add the coconut oil or butter.

    Step two:

    Once the oil has melted, crack an egg into the pan and allow the egg to cook until the white of the egg has just set.

    Step three:

    Then flip the egg and cook the second side for another 1-2 minutes. The yolk will start to puff up slightly when it's ready. Then serve and enjoy!

    Top Tips:

    • Use fresh eggs for best results - when fried, fresh egg whites hold their shape better whereas the whites on older eggs tend to spread.
    • Use room temperature eggs for best results and faster cooking times.
    • Fry the eggs over low heat or a low temperature. Don't try using a higher heat such as medium heat or medium-low heat.
    • Try not to let the yolk break when you add the egg to the pan.
    • Do not skimp on the oil. If your pan starts to dry up, add more so the eggs cook better and don't stick to the pan.
    • You know the egg is ready to flip just as the egg white has set. If you wait too long the yolk will get too firm, but if you try to flip it too soon the egg often breaks or the yolk splits.
    • You will notice the egg yolk begins to puff up once the egg has been flipped. This is a sign that the egg is ready.
    • I find it easiest to cook over medium eggs one at a time - if you try to cook many eggs at once it's very easy to over-cook them.
    • Be careful not to overcook the eggs or you will end up with over hard eggs instead.

    Variations and add ins:

    • Instead of coconut oil you can use a different cooking fat or oil of your choice. Other delicious options include butter, ghee, bacon grease, avocado oil or olive oil.
    • You can season these eggs however you like - I prefer a little sea salt and ground black pepper but feel free to add other herbs or spices. Some other great ideas include Everything But The Bagel seasoning, seasoning salt or truffle salt.
    • If you are serving a crowd feel free to cook as many eggs as you like using this method. Just keep adding oil to the pan as you go so that it doesn't dry up.

    How to serve:

    These eggs make a delicious breakfast and are delicious served on their own but you could also use them to make an egg sandwich, use them to top toast, to top a burger, make a burrito, or to add to salads. 

    You can also season or dress these eggs however you like. Salt and black pepper are classic options but feel free to top these eggs with ketchup, low sugar bbq sauce, mango habanero salsa or hot sauce! I also love topping my eggs with sliced avocado or turning this into avocado egg toast. 

    How to store:

    These fried eggs are best enjoyed right away. I don't recommend trying to store them to eat later.

    Frequently asked questions:

    What is the difference between over easy and over medium eggs?

    With over easy eggs the yolk is still runny while with over medium eggs the yolk is a little runny yet also a little firm.

    Can you make over medium eggs without flipping?

    Technically no. In order to properly cook over medium eggs you do need to flip the eggs. If you don't like flipping your eggs you can make sunny side up eggs instead.

    Are eggs dairy free?

    Yes they are. Eggs come from chickens so they are a poultry product, not a dairy product (dairy products come from cows).

    Are over medium eggs fully cooked?

    No they are not. The yolk is still a little runny rather than being fully cooked and firm.
