These fruit popsicles are so rich and creamy. The flavours of fresh strawberries and rich vanilla blend perfectly to give these popsicles the most amazing taste. They are sweet, but not too sweet and perfectly creamy. These popsicles are never icy.
Key ingredients and substitutions:Â
- Coconut milk - full fat coconut milk makes these popsicles so creamy and rich. The coconut milk is used for both the vanilla layer and the strawberry layer when making these popsicles. Be sure to use full fat coconut milk rather than light coconut milk for making these popsicles. Low fat coconut milk is too watery and will make the popsicles less creamy and more icy.
- Strawberries - fresh strawberries add a delicious flavour and beautiful pink color to these popsicles. You could also use frozen strawberries to make this recipe.
- Vanilla extract - to help enhance the flavours for this delicious dessert.
- Maple syrup - maple syrup is one of my favourite natural sweeteners that is refined sugar free. You could also swap this for honey.
How to make this recipe:
Step one:
First, start by making the vanilla layer. To do this you will place all the vanilla layer ingredients into your food processor or high speed blender and blending them until smooth.
Step two:
Next, pour the ingredients into your popsicle molds (about a third to half full) and place them in the freezer and freeze for 20-25 minutes.
Step three:
While the vanilla layer is freezing, add the strawberry layer ingredients to your food processor or blender and blend well until smooth.
Step four:
Then remove the popsicle molds from the freezer and pour the strawberry layer on top of the vanilla layer.
Step five:
Now place the lid on the popsicle mold and put the popsicle sticks into each popsicle (use the slots on the top of the lid of your popsicle mold). Then place the molds back in the freezer and freezer for 3 hours, or until fully frozen. Then serve and enjoy!
Tips and variations:
- You can use either fresh or frozen strawberries to make these popsicles.
- Don't worry about taking the stems off the strawberries - you can't taste them once they're blended so you can reduce your food waste by leaving them on (plus this makes them even easier to make).
- Use either honey or maple syrup to naturally sweeten this dessert.
- If you have more than one popsicle mold feel free to make a double or triple batch and save some for later.
- Run the popsicle molds under hot water for a few seconds when you remove them from the freezer to make the popsicles easier to remove from the mold.
- These popsicles are dog friendly so feel free to let your furry friend have a few licks (I wouldn't give them an entire popsicle as too much sugar isn't healthy for dogs).
- If you want to add some protein to these popsicles, add a few scoops of collagen peptides to the blender before blending each layer.
How to serve:
These popsicles are best served when they are cold, shortly after you take them out of the freezer. If you leave them out too long they will start to melt.

Ingredients
Vanilla Layer
- 1 cup full fat coconut milk
- 1 tablespoon organic vanilla extract
- 3 tablespoon maple syrup or honey
Strawberry Layer
- 2.5 - 3 cups fresh strawberries
- 1/2 cup full fat coconut milk
- 1 tablespoon organic vanilla extract
- 2 tablespoon maple syrup or honey
Instructions
Vanilla Layer
- Place all the ingredients into your food processor or high speed blender and blend until smooth.
- Pour into your popsicle molds (about 1/3 to 1/2 full). Place in the freezer and freeze for 20-25 minutes
Strawberry Layer
- While the vanilla layer is freezing add the ingredients for the strawberry layer to your food processor or blender and blend well until smooth.
- Remove the popsicle molds from the freezer (after 10-15 minutes) and pour the strawberry layer on top of the vanilla layer.
- Place the lid on the mold and put the popsicle sticks into each popsicle (use the slots on the top of the lid of your popsicle mold).
- Place the molds back in the freezer and freezer for 3 hours, or until fully frozen.
- Serve and enjoy!
