Why you will love this recipe:

    • The flavour! This no bake dessert combines smooth peanut butter, crunchy rice crisps cereal with melty marshmallows and is then topped with rich dark chocolate. The combination makes for the most amazing dessert.
    • These gooey rice crispy treats are quick and easy to make and you only need five ingredients to make them! Just like my chocolate covered pecans recipe.
    • They are made with simple ingredients that you can find at any grocery store, just like my chocolate snickers mug cake.
    • This dessert can easily be made gluten-free, dairy free, vegan, and nut free or peanut free to make it an allergy friendly dessert.
    • Kids love this treat! It is a fun twist on the classic Rice Krispie treats.

If you love Rice Krispie Treats you will also love my pumpkin Rice Krispie Treats and chocolate covered Rice Krispie Treats.

The ingredients needed to make chocolate peanut butter Rice Krispie treats separated into bowls including rice krispie cereal, marshmallows, dark chocolate and peanut butter.
    • Rice crisps cereal - you can either use classic Kellogg's Rice Krispies or another brand of rice crisps cereal to make these rice Krispie bars.
    • Mini marshmallows - the fresher the better!
    • Smooth peanut butter - be sure to use smooth, unsweetened peanut butter or natural peanut butter to make these dessert bars.
    • Dark chocolate - this is used for the chocolate topping on these bars. You can use dark chocolate bars, dark chocolate chips, or semi-sweet chocolate chips to make the chocolate layer. If you prefer milk chocolate you can use that instead.
    • Butter or coconut oil - either of these oils can be used to help melt the marshmallows and make them extra gooey.

    Recipe variations and add ins:

    • To make gluten-free: use gluten-free Rice Krispies or another gluten-free rice crisps cereal.
    • To make peanut free: swap the peanut butter for another smooth, unsweetened nut butter or seed butter such as almond butter, cashew butter or sunflower seed butter.
    • To make these Rice Krispie treats vegan: use coconut oil or a vegan butter, vegan marshmallows, a vegan rice cereal and vegan chocolate.
    • To make dairy-free: use coconut oil and dairy-free chocolate.
    • If you like a sweet and salty combination top these bars with some flaky sea salt before the chocolate hardens.

How to make peanut butter and chocolate rice krispie treats:

A pot on the stovetop with coconut oil melting in it.

Step 1: Line an 8 inch square pan with parchment paper and using a large pot on the stove top over low heat, melt the coconut oil or butter.

A pot on the stovetop with mini marshmallows in it.

Step 2: Once the butter or coconut oil has melted, add the marshmallows to the pot and heat, until the marshmallows are melted. Be sure to stir frequently so the marshmallows don't burn or stick to the bottom of the pot.

Step 3: When the marshmallows are all melted turn off the heat and stir in the peanut butter.

A pot with rice crisps cereal in it with a spoon in the cereal.

Step 4: Then fold the cereal into the marshmallow mixture.

Step 5: Transfer the cereal mixture to the prepared pan. Gently spread the mixture to fit the pan and press it down lightly so you have an even layer.

A glass measuring cup with melted chocolate in it.

Step 6: Put the chocolate in a microwave-safe bowl or dish, and heat it on high for 30-second intervals until melted.

A square baking pan with chocolate in it.

Step 7: Next pour the melted chocolate over the Rice Krispie treats and then transfer the pan to the fridge for 45 minutes to let the chocolate harden, or let them set for 2 hours at room temperature instead.

Step 8: Lastly, cut the cereal treats into squares and enjoy!

    Top Tips:

    • I recommend using mini marshmallows rather than large marshmallows. The mini marshmallows melt more easily.
    • I do not recommend using chunky peanut butter or crunchy peanut butter to make these treats.
    • The fresher the marshmallows the better these Rice Krispie treats will turn out - they will be more gooey with fresh marshmallows versus more firm if you use old or hard marshmallows.

Peanut Butter and Chocolate Rice Krispie Treats FAQs:

    Is Rice Krispies cereal gluten-free?

No, Kellog's Rice Krispies cereal is not gluten free because it is made with malt flavouring which is derived from barley.

Can I make these bars without the marshmallows?

No, I do not recommend omitting the marshmallows in this recipe. If you are looking for cereal bars made without marshmallows I recommend my chocolate peanut butter cereal bars or almond butter bars instead.

How should I store this dessert?

Store any leftover Rice Krispie Treats in an airtight container at room temperature for up to 5 days.

Can I freeze these Rice Krispie treats?

Yes, these bars freeze really well in a freezer safe bag or container for up to 3 months.
