Made with berries and refined sugar free these ice cream bars are a treat you can feel good about feeding to your whole family.
One of the foods I missed the most when I switched to the paleo diet was ice cream. I used to be an ice cream fanatic! I’m sure my brain was just addicted to all that sugar and dairy but I was the girl who would come home from school and inhale a giant bowl of ice cream. Mint chocolate chip, chocolate fudge, Skor and Oreo were my favorites. It’s no wonder my gut started rebelling against me later in life. But even though I’ve totally overhauled my eating habits that doesn’t mean I want to give up ice cream. Because ice cream and summer truly do belong together, and now that it’s nice and warm outside we should all be able to enjoy some ice cream. Even if we aren’t eating dairy or refined sugars.
I’ve posted a few different paleo ice cream recipes before, like my Avocado Mint Chocolate Chip Ice Cream, Lavender Vanilla Popsicles, Paleo Chocolate Ice Cream, and Paleo Strawberry Vanilla Popsicles, but this time I wanted to get a little more creative. So I came up with these Paleo Ice Cream Bars with Berries. And man are they good. Like I bet you can’t eat just one good! They’re also pretty darn easy to make and don’t require any fancy or hard to find ingredients.

- They’ve got a great crunchy crust with a melt in your mouth creamy ice cream layer
- They’re also vegan, GAPS and SCD friendly!
- These ice cream bars are dairy free so even if you are lactose intolerant or allergic to dairy you will be able to enjoy them
- This recipe is really easy to make and you don’t need an ice cream maker
- These paleo ice cream bars with berries don’t require any fancy, hard-to-find ingredients
What you’ll need to make these paleo ice cream bars with berries:
- A food processor to make the crust. I personally use and love this food processor which is very affordable
- A Vitamix or other high speed blender to make the ice cream layer. This is the Vitamix I own and absolutely love.
How to make these paleo ice cream bars with berries:
These paleo ice cream bars with berries are pretty easy to make, but you will need both a food processor and Vitamix or other high speed blender to make them.
First, we will make the crust by adding the ingredients to your food processor and blending well until the ingredients stick together, and are the texture you desire. Then transfer the ingredients to an 8″ by 8″ glass pan and press down evenly with a spoon until smooth.
Next we will make the vanilla layer by adding the ingredients to your Vitamix blender and blending well until smooth. Then pour the ingredients on top of the crust and spread evenly with a spoon or knife.
Next add the berry layer ingredients to your Vitamix and blend those ingredients until smooth. Pour the ingredients on top of the vanilla layer and spread throughout the vanilla layer, using a swirling pattern to create the pattern you desire.
Then put the whole pan in the freezer for 3-4 hours, until the ice cream layer is the texture you desire. Then remove the pan from the freezer and cut the bars into the sizes you desire. Then serve and enjoy!

Paleo Ice Cream Bars with Berries (Vegan, GAPS, SCD)
Paleo Ice Cream Bars with Berries are going to become your new favorite vegan ice cream treat. Dairy free, refined sugar free and safe for GAPS and SCD diets and so easy to make!
Ingredients
Crust Ingredients
- 1 1/2 cups raw almonds
- 1 cup finely shredded coconut
- 4 tbsp honey or maple syrup
- 1 tsp organic vanilla extract
- pinch sea salt
Vanilla Cheesecake Layer Ingredients
- 2 cups raw cashews
- 1 cup full fat coconut milk
- 1/4 cup honey or maple syrup
- 1 tbsp organic vanilla extract
- pinch sea salt
Berry Layer Ingredients
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 2 tbsp coconut oil
- 1 tbsp honey or maple syrup
Instructions
Crust Instructions

Place all the ingredients into your food processor

Blend until the ingredients stick together and are the texture you desire

Transfer the ingredients to a 8" x 8" glass baking dish and press down with a spoon until smooth

Place the pan in the freezer while you make the cheesecake layer
Vanilla Cheesecake Layer Directions

Place all the ingredients into your Vitamix or other high speed blender

Blend well until smooth

Poor the ingredients over the crust and spread with a spoon until smooth
Berry Layer Directions

Place the ingredients into your Vitamix or other high speed blender

Blend until smooth

Transfer the ingredients on top of the cheesecake layer and spread throughout, in a swirling pattern
Final Directions

Place the pan in the freezer and freeze for 3-4 hours, until the ice cream layer is the consistency you desire

Remove the pan from the freezer and cut the pieces into the desired size
Recipe Notes
- You can store these ice cream bars in the freezer
- If you are vegan use maple syrup instead of honey
- If you are on the SCD or GAPS diets, use honey instead of maple syrup
