How to make:
Step one:
First, add all the marinade ingredients to a bowl or glass measuring cup and stir well to combine.
Step two:
Next, pour the marinade over the raw chicken breasts and let marinade for 2 hours, or overnight to use the next day. You can marinade the chicken in a large glass baking dish or in a large resealable plastic bag, whichever you prefer.
Step three:
Then cook the chicken however you like. You can either grill it or bake it in the oven.
How to cook chicken:
You can cook marinated chicken in many different ways and here are some guidelines for cooking it to ensure you get the most tender chicken.
To grill:
Heat the grill until it is hot (about 400-450° F or 205-230° C). Cook boneless skinless breasts and thighs for about 5-7 minutes per side or bone-in thighs for 10-12 minutes per side, moving the chicken to the less hot part of the grill about half way through. Let the grilled chicken sit for 10 minutes before cutting into it and serving.
To bake in the oven:
Preheat the oven to 375° F. To keep the chicken from drying out, rub or spray the chicken with olive oil or avocado oil before baking it. Place the chicken on a rimmed baking sheet or in a glass baking pan and bake for 20-25 minutes for boneless, skinless chicken breasts or boneless thighs and 45-50 minutes for bone in thighs.
To pan fry:
Heat 1-2 tablespoons of oil in large skillet over medium heat. Then add the boneless skinless chicken breasts or thighs to pan and sear for 6-8 minutes before flipping and cooking for 4-6 minutes on the other side until cooked through. For bone-in thighs with the skin on, place the chicken skin side down in the skillet and sear for 2-3 minutes. Cover with a lid and cook the chicken for 4-5 more minutes. Remove the lid and flip each piece over. Replace the lid back and cook for an extra 8-12 minutes until the chicken is cooked through.
To air fry:
Cook boneless skinless chicken breasts or thighs in air fryer preheated to 375° F for 10-15 minutes. For bone-in thighs, cook for 12-18 minutes. The cook times will vary depending on the size of the chicken pieces.
You will know your chicken is cooked when it reaches a minimum internal temperature of 165 °F (73.9 °C) as measured with a meat thermometer.
