"Are you eating blue meat?!"
That is what my mother asked me when she saw me eating these pork chops one night. And I had to say yes since the blueberries do turn the meat blue. It might look gross but trust me these taste really good! So who cares what they look like. At least I don't. And I bet your kids will actually think it's pretty fun to eat blue meat for dinner. Any way to make meal time even more enjoyable can never hurt right?
I make these pork chops on a fairly regular basis because they are super easy, healthy, and most importantly, tasty! That's a pretty good combination if you ask me. I wish I could say I had the time to make elaborate dinners every night but during residency that is just not feasible. So these pork chops are an easy solution for nights that are rushed. These only have four ingredients and are ready in less than 10 minutes. How is that for easy and fast? And so much healthier than fast food!
Is anyone else sad that the Olympics are over? We have to wait another four years for the next ones! They always go by way too quickly if you ask me. I wasn't able to watch nearly as much as I usually do this go around because of all the studying I am doing. The only thing motivating me to keep studying right now is the trip to Bali I have planned as soon as the exam is over! I cannot wait to get on that plane and get to the beach! If any of you have been to Bali I would love to get your suggestions on things I must see and do while I am there. Right now nothing has been set in stone (other than my flights) so I am open to anything you suggest!
You know what else is sad besides the Olympics being over? Blueberry season is ending. My favourite food season has come and gone for another year. Hopefully you still have some blueberries in your fridge that you can use to make these pork chops though. Because they really are delicious I promise. I would never lie to you when it comes to food. And like I mentioned, they are ready in less than 10 minutes so you can get a healthy, tasty, meal on the table in no time. These 10 Minute Blueberry Pork Chops are also compatible with most special diets, including paleo, AIP, Whole 30, GAPS, SCD and low FODMAP. Because it's like I always say, healthy food doesn't have to be boring! And even though you may be eating a restricted diet doesn't mean you have to miss out on tasty meals. At least not in my world.

10 Minute Blueberry Pork Chops
Ingredients
- 5-6 pork chops
- 3-4 tablespoon coconut oil
- 1 1/2 - 2 cups fresh or frozen blueberries
- 1/2 teaspoon sea salt
Instructions
- Place a large pan on the stove on medium heat.
- Place the coconut oil, sea salt, and blueberries in the pan and allow to heat until blueberries start to break apart (a couple minutes).
- While the oil and blueberries are heating, rinse your pork chops and pat dry.
- Add the pork chops to the pan, cooking for 3-4 minutes per side (Ensure your pan is at full heat before adding your pork chops or they won't cook nearly as quickly).
- Remove from heat and enjoy!

I sometimes add a bit of sea salt after they are done… but this is definitely not necessary.
