Paleo Berry Coconut Waffles
These paleo berry coconut waffles are so delicious! Made with healthy ingredients they are easy to make and are also gluten free and dairy free.

Ingredients
1/2
cup
coconut flour
1/2
cup
tapioca flour
1
teaspoon
baking soda
1
pinch
sea salt
1/2
cup
full fat coconut milk
1/4
cup
melted coconut oil
3
tablespoon
water
2
tablespoon
honey or maple syrup
1
teaspoon
organic vanilla extract
3
eggs
pasture raised if possible
1
cup
fresh raspberries
Instructions
Turn your waffle iron on.
In a large bowl combine all the ingredients until you have a smooth batter.
Add the batter to the waffle iron (I added about 3-4 tablespoon per waffle).
Cook until done (mine took 6-7 minutes - but different waffle irons may have different cooking times).
Remove from the waffle iron and let the waffles cool for 1-2 minutes.
Serve and enjoy!
Notes
Use room temperature eggs for best results.
If you have leftover waffles store them in an airtight container in the fridge for up to 5 days.
