Chocolate ice cream. That is one thing I thought I had given up forever when I switched to the paleo diet. Giving up dairy was definitely not easy, but the health benefits I have seen from doing so have been totally worth it. So after some trial and error I am pleased to say that I have managed to create a Paleo Chocolate Ice Cream recipe that I love.
Place all the ingredients in your Vitamix blender or food processor
Blend until smooth
Pour into a freezer safe dish (I used a bread pan)
Place the dish in the freezer for 1.5 - 2 hours (depending on how soft you like your ice cream)
Serve and enjoy!
Note: You can store this in the fridge or freezer. I actually prefer the texture when it is stored in the fridge but you may prefer it in the freezer.
