Cranberry Maple Chicken

This cranberry maple chicken has the most delicious flavour and is an easy one pan meal that your whole family will love!

  • 1/2 cup avocado oil
  • 1/4 cup balsamic vinegar
  • 1/4 cup maple syrup
  • 1 tbsp herbes de Provence spice blend
  • 1 tsp sea salt
  • 1/4 tsp ground black pepper
  • 6 chicken thighs
  • 1 head broccoli, chopped
  • 227 grams fresh cranberries (8 oz)


  1. Preheat the oven to 350F and make the marinade by blending the oil, vinegar, maple syrup and spices together in a bowl or jar

  2. Lay the chicken, broccoli and cranberries in a 9"x13" glass baking dish and pour the marinade over top. Turn the chicken a few times to coat evenly

  3. Cover the dish in tin foil and bake for 40 minutes. Remove the tinfoil and bake for an additional 10-15 minutes, until the chicken is cooked

  4. Serve and enjoy!

Recipe Notes

  1. This recipe makes great leftovers and can be stored in the fridge for up to 5 days in an airtight container.
  2. You can use frozen cranberries for this recipe, just thaw them first.
