Cranberry Maple Chicken

This cranberry maple chicken has the most delicious flavour and is an easy one pan meal that your whole family will love!

Ingredients

  • 1/2 cup avocado oil (or olive oil)
  • 1/4 cup balsamic vinegar
  • 1/4 cup maple syrup
  • 1 tablespoon herbes de Provence spice blend
  • 1 teaspoon sea salt (more or less to taste)
  • 1/4 teaspoon ground black pepper (more or less to taste)
  • 6 chicken thighs
  • 1 head broccoli, chopped
  • 227 grams fresh cranberries (8 oz)

Instructions

  • Preheat the oven to 350F and make the marinade by blending the oil, vinegar, maple syrup and spices together in a bowl or jar.
  • Lay the chicken, broccoli and cranberries in a 9" x 13" glass baking dish and pour the marinade over top. Turn the chicken a few times to coat it evenly.
  • Cover the dish in tinfoil and bake for 40 minutes. Remove the tinfoil and bake for an additional 10-15 minutes, until the chicken is fully cooked.
  • Serve and enjoy!

Notes

  1. This recipe makes great leftovers and can be stored in the fridge for up to 5 days in an airtight container.
  2. You can use frozen cranberries for this recipe, just thaw them first.
