Paleo Pumpkin Chocolate Chip Cookies

These paleo pumpkin chocolate chip cookies are just the best! Soft and chewy and loaded with chocolate you will love how easy they are to make. They are also gluten free and vegan!

  1. Preheat your oven to 350F.

  2. Add all the ingredients, except for the chocolate chips to a large bowl and blend well until smooth with a spoon or pastry blender.

  3. Add the chocolate chips and stir them into the dough.

  4. Line a baking sheet with parchment paper, and using a medium sized cookie scoop, transfer the dough to the cookie sheet.

  5. Using a fork or spatula, flatten each cookie (otherwise the cookies won't flatten when they bake).

  6. Bake for 10-12 minutes, until the bottoms are golden.

  7. Remove the cookies from the oven and let them cool. Then enjoy!

Recipe Notes

  1. This recipe makes 12 cookies.
  2. To make these cookies vegan, use a chia seed or flax seed egg instead of an egg. 
  3. To make these cookies paleo, ensure that the chocolate chips you use are both dairy free and soy free. 
  4. I recommend wetting the spoon or spatula in between each cookie when flattening them so that the dough doesn't stick.
  5. I recommend letting these cookies cool completely before eating them.
  6. I think these cookies taste even better the next day.
