Paleo Mint Crunch Bars Recipe


  • 2 cups raw cashews, ideally soaked and dehydrated first
  • 1 cup raw sunflower seeds, ideally soaked and dehydrated first
  • 1 cup finely shredded coconut
  • 30 large fresh mint leaves
  • 1/3 cup melted coconut oi
  • 1/4 cup honey or maple syrup


  1. In your food processor (this is the one I use and love) combine the cashews, sunflower seeds, coconut and mint leaves

  2. Process the ingredients until they are your desired texture (I still like to have some larger chunks)

  3. Transfer the ingredients to a large bowl

  4. Add the coconut oil and honey and stir well to combine

  5. Transfer the ingredients to a 9"x9" pan

  6. Press the ingredients down with a spoon to form a flat, even layer

  7. Place the pan in the freezer for at least 2 hours

  8. Remove the pan from the freezer and cut the bars into desired sized pieces

  9. Serve and enjoy!

Recipe Notes

Note: These bars are quite crumbly which is why I recommend storing them in the freezer.
