Paleo Curried Lemon Coconut Chicken

This came about when I took whatever I could find in the fridge and threw it in the slow cooker and went on with my day!

  • 1 can full fat coconut milk
  • 1 lemon, for zest and juice equivalent to 1/4 cup lemon juice
  • 1 tablespoon curry spice
  • 1/2 teaspoon sea salt
  • 1 teaspoon turmeric
  • 6 chicken breasts or thighs


  • Turn your slow cooker onto high heat
  • Add all the ingredients to the slow cooker
  • Cook for 4 hours
  • Serve and enjoy! 


Serve over rice, cauliflower, zoodles, whatever strikes your fancy.
