Slow Cooker Moroccan Chicken

This couldn't be easier - it's literally a dump and cook meal. I love easy meals like that and the vibrant colors are an added bonus.

Ingredients

  • 1 1/2 cups bone broth
  • 2 tablespoon grass-fed ghee
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon sea salt
  • 2 lbs parsnips, peeled and diced
  • 8 apricots, de-pitted and cut into quarters
  • 6 ethically raised chicken thighs or breasts
  • 1/2 onion, diced Optional: avoid if low FODMAP

Instructions

  • Turn your slow cooker onto high heat
  • Add all the ingredients and cook for 4-5 hours
  • Serve and enjoy!
