Simply Sweet Tomato Soup

Skip the can (full of added salt and sugars) and make your own simple and sweet tomato soup for cold days.

Ingredients

  • 6 cups baby tomatoes, washed and dried
  • 1 can full fat coconut milk
  • 2 tbsp grass-fed ghee
  • 1 tbsp dried organic basil
  • 1/4 tsp sea salt plus more if desired
  • 1/8-1/4 tsp pepper depending on taste

Instructions

  1. Add baby tomatoes and coconut milk to your blender and blend until smooth

  2. Transfer ingredients to a large pot on the stove and turn the burner to medium heat

  3. Add remaining ingredients and allow the soup to come to a boil

  4. Simmer for 5-10 minutes

  5. Remove from heat, serve and enjoy!
