Coconut Fried Cauliflower Rice

This coconut fried cauliflower rice is full of flavour and really easy to make! The perfect healthy side dish.

Ingredients

  • 1 head cauliflower
  • 1 sweet bell pepper
  • 3 carrots
  • 1/2 head broccoli
  • 2 tablespoon coconut oil
  • 200 grams creamed coconut (or coconut butter)
  • 1/2 cup peach juice pear or mango should also work
  • 1/2 teaspoon sea salt could use more or less depending on your preference
  • 1/2 teaspoon ground ginger more or less depending on preference
  • 1/2 teaspoon ground turmeric will give the rice a yellow-ish colour

Instructions

  • Chop your cauliflower and steam until tender.
  • While cauliflower is cooking finely dice the carrots, celery, bell pepper and broccoli.
  • Place the coconut oil in large skillet on medium heat and allow it to melt.
  • Once the oil is melted, add the diced vegetables to the skillet and allow to tenderize while cauliflower is still cooking.
  • Once the cauliflower is done cooking, mash it with a potato masher (or hand blender would also work well). This will form your "rice" so the smaller the pieces the better.
  • Transfer the cauliflower rice to the skillet
  • Add the creamed coconut, juice and spices to the skillet and allow to cook/ fry on medium heat for approximately 15 minutes or until all the liquids have been absorbed
  • Serve and enjoy!

Notes

This is a delicious rice substitute and the juice gives it an amazing, authentic color.
