1/2teaspoonground turmericwill give the rice a yellow-ish colour
Instructions
Chop your cauliflower and steam until tender.
While cauliflower is cooking finely dice the carrots, celery, bell pepper and broccoli.
Place the coconut oil in large skillet on medium heat and allow it to melt.
Once the oil is melted, add the diced vegetables to the skillet and allow to tenderize while cauliflower is still cooking.
Once the cauliflower is done cooking, mash it with a potato masher (or hand blender would also work well). This will form your "rice" so the smaller the pieces the better.
Transfer the cauliflower rice to the skillet
Add the creamed coconut, juice and spices to the skillet and allow to cook/ fry on medium heat for approximately 15 minutes or until all the liquids have been absorbed
Serve and enjoy!
Notes
This is a delicious rice substitute and the juice gives it an amazing, authentic color.
