Dairy-Free Rice Pudding (vegan, gluten free)

This is the best dairy-free rice pudding! So creamy and delicious it's easy to make and is also vegan and gluten free.

Instructions

  1. Add all the ingredients to a medium sized pot and place on the stove on medium heat

  2. Bring the ingredients to a boil and turn down the heat to low. Simmer for 20-25 minutes, stirring frequently, until it reaches the consistency you desire

  3. Turn off the burner and place the lid on the pot and let stand for 10 minutes (this will soften the rice even more)

  4. Serve and enjoy!

Recipe Notes

  1. I only recommend using full fat coconut milk for this recipe
  2. Store this rice pudding in the fridge for up to a week
  3. Topping ideas: dried fruit, fresh or frozen berries, chopped nuts, banana, dark chocolate, cacao nibs or nut butter
