Easy Stuffed Peppers (Whole30, Paleo, GAPS, SCD)

Packed with flavour and easy to make these stuffed peppers make the perfect weeknight meal. They are Whole30, paleo, GAPS and SCD.

  • 3 tbsp coconut oil
  • 1 small white onion, diced
  • 3 bell peppers I used one of each colour
  • 3 tomatoes, chopped
  • 1 1/2 lbs grass-fed ground beef
  • 2 tbsp dried oregano
  • 1 tsp sea salt plus a little more for seasoning the peppers
  • 1 tsp ground black pepper plus a little more for seasoning the peppers
  • 1 tsp ground cumin


  1. Preheat your oven to 350F

  2. Place a medium pan on the stove on medium heat

  3. Add the coconut oil and allow to melt

  4. Add the diced onion and start cooking

  5. While the onion is cooking, cut one of the bell peppers in half and dice half of the pepper

  6. Add the diced pepper to the onion and cook together until the onion is clear

  7. Add the ground beef, tomatoes and spices to the pan and mix well

  8. Cook until the ground beef is browned and the tomatoes are fully cooked

  9. Cut the remaining bell peppers in half, remove the stems and seeds, and place on a baking sheet (face up) lined with parchment paper

  10. Sprinkle the peppers with salt and pepper

  11. Scoop the ground beef filling into each pepper

  12. Place the baking sheet in the oven and cook for 30-40 minutes (I actually like the meat crispy in these so I cook them longer but cook them to your preference)

  13. Remove from the oven and add the Avocado Crème (Get the recipe here)

  14. Serve and enjoy!

Recipe Notes

Feel free to top these peppers with whatever you like. Great options include fresh salsa, cilantro or red pepper!
