Peppermint Smoothie

This peppermint smoothie is so refreshing! It's easy to make with a delicious mint flavour this healthy smoothie makes a delicious breakfast or snack.

Ingredients

  • 2 ripe bananas
  • 2 cups packed fresh spinach
  • 1 cup packed fresh mint leaves
  • 1 cup full fat coconut milk
  • 1 teaspoon peppermint extract omit for AIP
  • 1 tablespoon Optional: grass-fed gelatin powder omit for vegan
  • 1-2 teaspoon Optional: spirulina powder omit for SCD and AIP

Instructions

  • Place all the ingredients into your high speed blender.
  • Blend well until smooth.
  • Serve and enjoy!

Notes

No mint leaves? Try 1/2 teaspoon of peppermint extract instead.
