Chocolate Ginger Cookies

These cookies are made with both almond and coconut flours to give them a unique flavour and they include both ground ginger and cacao powder for some added health benefits.

Ingredients

Instructions

  • Preheat oven to 350F
  • Combine dry ingredients in a large bowl
  • Add the wet ingredients and mix well with a pastry blender
  • Using your hands, form a large ball with the dough
  • Transfer to a piece of parchment paper
  • Place another piece of parchment paper on top of the ball of dough
  • Using your rolling pin, roll out the dough until it is 4-5 mm thick
  • Using your cookie cutters, cut the cookie shapes and transfer to a baking sheet
  • Cook the cookies for 15-17 minutes (this will depend on the size of your cookies) 
  • Remove from oven and let cool
  • Serve and enjoy! 

Notes

Feel free to add any sort of icing that fits your diet.
