Chocolate Ginger Cookies
These cookies are made with both almond and coconut flours to give them a unique flavour and they include both ground ginger and cacao powder for some added health benefits.

Ingredients

cups
blanched almond flour
1/2
cup
organic coconut flour
4
tablespoon
organic cacao powder

tablespoon
+ 1 teaspoon organic ground ginger
1
tablespoon
ground cinnamon
1/2
teaspoon
aluminum free baking soda
1
pinch
sea salt
1/2
cup
full fat organic coconut milk
1/4
cup
melted coconut oil
1/4
cup
melted grass-fed ghee
1/4
cup
honey or maple syrup
honey for GAPS

water

tablespoon
organic vanilla extract
Instructions
Preheat oven to 350F
Combine dry ingredients in a large bowl
Add the wet ingredients and mix well with a pastry blender
Using your hands, form a large ball with the dough
Transfer to a piece of parchment paper
Place another piece of parchment paper on top of the ball of dough
Using your rolling pin, roll out the dough until it is 4-5 mm thick
Using your cookie cutters, cut the cookie shapes and transfer to a baking sheet
Cook the cookies for 15-17 minutes (this will depend on the size of your cookies)
Remove from oven and let cool
Serve and enjoy!
Notes
Feel free to add any sort of icing that fits your diet.
