Vegan Orange Chocolate Fudge

This vegan orange chocolate fudge is such a delicious dessert. It's easy to make and has the most incredible flavour. Plus it's dairy free and gluten free too.

Ingredients

  • 2 cups raw cashews
  • 1/4 cup coconut butter, melted (or coconut manna)
  • 1/2 cup coconut oil, melted
  • 1/3 cup maple syrup (or honey if you aren't vegan)
  • 1/4 cup orange juice
  • 1/3 cup cocoa powder (or cacao powder)
  • 1 tablespoon orange zest
  • 1 teaspoon organic vanilla extract
  • 1 pinch sea salt

Instructions

  • Place all the ingredients into your food processor.
  • Blend them well until they are smooth.
  • Line an 8" x 8" pan with parchment paper (or use a silicone pan if you have one) and pour the ingredients into the pan. Spread well and press down with a spoon or knife to form an even layer.
  • Place the pan in the freezer for about 60 minutes.
  • Cut the fudge into pieces of desired size and enjoy!

Notes

  1. Store the fudge in the fridge, or put some in the freezer for a later date.
  2. If you don't have a food processor this can also be made in your Vitamix blender. 
  3. Instead of cocoa powder you can use cacao powder. 
  4. Nutritional values are an estimate and will vary depending on the exact ingredients used. 
  5. Use a hot knife to making cutting this fudge even easier. 
  6. To spread the chocolate more easily, you can wet your spoon or knife.
