Over Medium Eggs

These are the perfect over medium eggs. They are so easy to make in less than 5 minutes and the yolk turns out slightly firm and slightly runny.

Ingredients

  • 1 tablespoon coconut oil or butter
  • 2 eggs

Instructions

  • Place a pan on the stovetop over low heat and add the coconut oil or butter.
  • Once the oil is melted, crack an egg into the pan.
  • Allow the egg to cook until the white has just set.
  • Flip the egg and cook it for another 1-2 minutes. The yolk will start to puff up slightly when it's ready.
  • Serve and enjoy!

Notes

    1. Use fresh eggs for best results - when fried, fresh egg whites hold their shape better whereas the whites on older eggs tend to spread.
    2. Use room temperature eggs for best results and faster cooking times.
    3. Fry the eggs over low heat. Don't try using a higher heat.
    4. Instead of coconut oil you can use a different cooking fat or oil of your choice. Other delicious options include butter, ghee, bacon grease, avocado oil or olive oil.
    5. If you are serving a crowd feel free to cook as many eggs as you need, just keep adding oil to the pan as it dries up.
