Vegan Blondies

These are the best vegan blondies! Soft and chewy on the inside they are bursting with chocolate and could not be easier to make.

  • Preheat your oven to 350F.
  • Add all the ingredients, except the chocolate chips, to the bowl of your standing mixer and blend well until smooth.
  • Stir in the chocolate chips by hand.
  • Line an 8" x 8" baking dish with parchment paper and transfer the dough to the dish. Spread the dough into an even layer. Then bake it for ~18 minutes, until golden on the edges. Tip: the dough is very sticky, so wet a spoon to make it easier to spread.
  • Allow the blondies to cool, then cut them into pieces and enjoy!

Notes

  1. To make a flax egg or chia egg: mix 1 tablespoon of ground flaxseed or chia seeds with 3 tablespoons of water.
  2. If you don't follow a vegan diet, you can substitute for one large egg for the chia or flax egg. 
  3. Allow the blondies to cool completely before slicing.
