    It's officially summer! Who else is excited? Summer is by far my favourite season of the year. By far! Warm weather just makes me happy. As does good food. Food like the recipe I am sharing with you today for this Whole30 Avocado Crème. It is perfect for summer because it comes together in just seconds and makes the perfect dip, dressing or sauce.

    No one wants to be slaving away in the kitchen during the summer. I get it, you want to be outdoors playing in the sunshine so the easier the recipes the better right? I am already picturing myself sitting but the pool, drink in hand, snacking on some raw veggies dipped in this Whole30 Avocado Crème. I can't wait! I leave for vacation this week and am so excited. Two whole weeks of sun, lake swims, poolside reading and relation. In other words: total bliss.

    How was your weekend? Ours was spent at weddings. Two weddings for the same couple. A little ridiculous right? But that's what happens when two people from two different religions get married. Friday was the Hindu wedding portion and then Saturday was the Catholic wedding part. And unfortunately it poured rain all weekend. Like really, really poured. I felt bad for the couple for that. For those brides that dream of all those perfect outdoor wedding photos that was just not possible this weekend. But that's okay, they made the most of it and it was still a lot of fun. Many of Erik's relatives from LA also flew in for the occasion so I got to meet some family members that I had never met before which was nice.

    One tradition at weddings which I cannot stand is the one where people tap their glasses to get the newlyweds to kiss. I wouldn't mind it if people only did it occasionally but at the wedding over the weekend people were literally tapping their glasses every couple minutes. It was so obnoxious! And totally immature if you ask me. Is anyone else with me on that one? Or do you like that tradition? If I ever get married I will definitely not be allowing that at my wedding. No way Jose.

    I initially created this Whole30 Avocado Crème to top a Whole30 Stuffed Peppers recipe that will be coming next week (it's a good one I promise!), but this sauce is just so versatile that I wanted to give it to you sooner. Becauase it's so much more than just a topping for stuffed peppers. This Whole30 Avocado Crème makes the perfect dip for raw veggies, topping for salads, sauce for meat, fish, burgers, sandwiches or pasta dishes (if you eat grains that is). Really you can use it for almost anything. Besides being Whole30 safe it is also paleo, AIP, vegan, GAPS and SCD safe as well. Basically whatever special diet you are on this Whole30 Avocado Crème will be safe for you to eat.

    This Whole30 Avocado Crème is also loaded with healthy fats from both avocados and coconut milk. Because if there is one thing that your body needs it is healthy fats. Low fat diets are one of the worst things that you can do for your health. In fact, since the low fat guidelines were introduced back in the 1960's people have just been getting sicker and sicker and fatter and fatter. Our food guides have it totally backwards. Your body needs fat. Healthy fat. Fat from natural sources. Fats like lard, butter, avocados, coconut oil, tallow, olive oil, avocado oil, coconut milk and more. Saturated fats are some of the healthiest foods on the planet and are loaded with all sorts of vitamins and minerals that you can't get anywhere else. If there is one thing I can teach you I hope that it's to not be scared of fat. Be scared of all of those "vegetable oils" like canola and sunflower oils  - they are in fact grains oils - which are an extremely processed type of fat and extremely harmful to your health. I don't have the time to go into this issue in depth on this post but if you are looking for a great read that will explain it all to you I highly recommend reading Eat The Yolks by Liz Wolfe. The documentary The Magic Pill on Netflix also talks about this (Note that I don't agree with everything in that movie but a lot of the nutritional info is really great).

    Avocados really are a super food. They have so many health benefits including:

    • Are a great source of fibre
    • Contain many vitamins including vitamins A, K, C, E, B6, as well as folate
    • Contain many trace minerals including magnesium, potassium, iron and copper
    • Are a great source of monounsaturated fats
    • Have a high protein content
    • Contain antioxidants

    There are many easy ways to incorporate avocados into your daily diet including using them to top any salad or meat dish, making guacamole or any of my avocado recipes including my Avocado Mint Chip Ice Cream (yes ice cream made from avocados!), my Chocolate Avocado Mousse or my Double Chocolate Avocado Brownies. All of which are delicious if I do say so myself.

    Ingredients

    • 3 ripe avocados
    • 3/4 cup full fat coconut milk
    • zest from one lime
    • juice from 2 limes
    • juice from one lemon
    • 1 tablespoon coconut vinegar
    • 1 tablespoon dried cilantro
    • 1/2 teaspoon sea salt

    Instructions

    • Place all of the ingredients into your Vitamix or food processor and blend well until smooth
    • Serve and enjoy!
