    Whole30 Beef and Blueberry Burrito Bowls are going to become your favourite weeknight dinner. These beef burrito bowls are so easy to make, and they taste amazing! They are also gluten free, paleo and kid friendly.

    Whole 30 Beef and Blueberry Burrito Bowls. That's what's on the menu this week. The farmer's markets are still overflowing with blueberries so I have been putting them in everything! Yes, even in beef dishes. Trust me you won't regret adding blueberries to your beef. And if it is still as hot where you are you will appreciate how quickly this recipe comes together. The last thing you want to be doing right now is slaving away in the kitchen over a hot stove. Trust me, I get it.

    Now I know I am late to the game here but we just went and saw the new Spiderman movie a few days ago. I have to say I was extremely impressed! Erik is a big comic movie fan and so I end up seeing almost all of them and this one my just be my favourite. So if you haven't yet seen it I highly recommend checking it out.

    In other entertainment news, have any of you heard Taylor Swift's new song? Now, as I have mentioned in the past I am a huge Taylor fan. However, I am going to be brutally honest and just say it. That song is terrible. Like so terrible! To me it sounds like a song that a new teenie bopper would put out in the hopes of launching their pop career. Not a song from a seasoned artist. Sorry Taylor but I am not impressed. I am hoping the rest of the album is more impressive. Really, really hoping.

    These Whole 30 Beef and Blueberry Burrito Bowls may be my new favourite dinner recipe. Why? Because they are so flavourful and so easy to make! Plus you can really add whatever you want to them so they taste different every time. In the photos I added lettuce (fresh from the garden I might add), tomatoes and my Plantain Crisps. In other versions I have added cilantro, Whole 30 Mango Salsa and black olives. Other great additions include avocado or guacamole, cauliflower rice or pork rinds (don't judge it until you try it). Really the possibilities are endless! What will you add to yours? This dish comes together in just a few minutes and it is Whole 30, paleo, AIP, SCD, and GAPS safe. I know that you have better things to do with your time than slave away in the kitchen right now so I wanted to give you an easy dish this week. If you are like me you are still enjoying the last of summer, but I also know that some of you have kids who have gone back to school so easy is the name of the game right now. And I'm pretty sure that your kids will appreciate some blue ground beef. Because making dinner time fun always makes it easier right? Right!

    Ingredients

    • 2 tablespoon coconut oil
    • 3/4 cup green onion, chopped you could also substitute a small white onion
    • 1 1/2 cups fresh blueberries
    • 2 lbs ground grass-fed beef
    • 2 tablespoon dried basil
    • 1 teaspoon sea salt
    • 1/2 teaspoon ground black pepper
    • 2 limes, for juice

    Instructions

    • Place a large pan on the stove on medium heat
    • Add the coconut oil and green onion
    • Cook for 1-2 minutes
    • Add the remaining ingredients and cook until the beef is cooked through, stirring frequently to break the beef apart
    • Turn off the heat and remove the pan from the burner
    • Assemble your burrito bowls using ingredients of your choice
    • Serve and enjoy!
