Vegan Blueberry Cheesecake

This decadent no-bake vegan blueberry cheesecake is paleo and gluten-free!

Key ingredients you'll need: nuts, dates, cashews, coconut milk, maple syrup, vanilla extract, and blueberries.

Step 1: Line a 10" pan with parchment paper and grease the sides with coconut oil.

Step 2: Add all the ingredients for the crust in a food processor and blend until a dough forms. Then spread the dough evenly across the bottom of the pan.

Step 3: Add the ingredients for the creamy layer in a blender except the blueberries and blend until smooth!

Step 4: Pour 2/3 of the filling over the crust and spread it evenly. Place the pan in the freezer for 30 minutes.

Step 5: Add the blueberries to the remaining filling and blend until smooth.

Step 6: Spread the blueberry layer evenly on top of the cheesecake and freeze for 2-3 hours until firm.
