To make this Sun Dried Tomato Pasta you'll need: raw cashews, full fat coconut milk,  sun dried tomatoes, spinach, and nutritional yeast.

Step 1: Prepare the pasta according to the directions on the box.

Step 2: Place all the ingredients for the sauce into your high speed blender and blend well until smooth.

Step 3:  Transfer the pasta to a large pan and pour the sauce over top of the noodles and stir well to combine.

Step 4:  Add the frozen spinach and olives to the pan and heat everything together for a few minutes, until the spinach is wilted and the sauce is warm.
