Healthy Blueberry Muffins

These healthy blueberry muffins are made with almond flour so they are high in protein and are also dairy free.

To make these Healthy Blueberry Muffins you'll need: almond flour, tapioca starch, coconut flour, coconut sugar, coconut milk, apple cider vinegar,  and blueberries.

Step 1: Preheat the oven to 350F. Place all the dry ingredients into the bowl of a standing mixer.

Step 2: Add all the wet ingredients to the bowl.

Step 3: Using a low setting, blend all the ingredients until they are smooth.

Step 4: Add the blueberries to the bowl and stir them into the batter by hand.

Step 5: Line a muffin tray with large parchment muffin cups. Then scoop the batter into the muffin cups until the dough is level with the tray.

Step 6: Place the tray in the oven and bake the muffins for 25-30 minutes, until a toothpick inserted inside comes out clean.
