Step 1: In a large pan or skillet over medium-high heat, melt coconut oil, then add onion and crushed garlic and sauté until the onion turns translucent.
Step 2: Add vegetable stock, spices and diced potatoes to the pan and bring everything to a boil, then reduce to low heat and simmer for 15 minutes.
Step 3: Add green beans to the pan, cover the pan, and simmer for another 15 minutes, until the beans and potatoes are tender.
Step 4: Turn the heat off and cover the pan with the lid for 5 more minutes to let the liquid absorb into the vegetables.
