Key ingredients you'll need: rice noodles, coconut oil, chicken breasts, veggies, plus a few ingredients for the sauce.

Step 1: Cook the rice noodles according to the package instructions. Then rinse them in cold water, drain, and set them aside.

Step 2: Place the ingredients for the sauce in a bowl and stir together until smooth.

Step 3: Place a pan over medium heat and add the coconut oil in. Add the chopped chicken breasts and cook them for 1-2 minutes per side.

Step 4: Add the chopped veggies to the pan and cook for another 10 minutes, or until the veggies are soft.

Step 4: Add the noodles to the pan, stir well to combine and cook for another 1-2 minutes.
