Key ingredients you'll need: russet potatoes, onion and garlic, vegetable stock, nutritional yeast, coconut milk.

Step 1: Peel and slice the potatoes, then set them aside.
Preheat the oven to 400F.

Add half of the potatoes into a greased baking dish.

Step 3: Add a pan on the stove over medium heat. Add coconut oil, chopped onion and garlic. Cook until translucent.

Step 4: Add the nutritonal yeast and stir well to combine.

Step 5: Add all the remaining ingredients and stir everything well to combine. Cook for few more minutes.

Step 6: Pour half of the sauce over the potatoes. Add the remaining potatoes to the dish and top with the remaining sauce.

Step 7: Cover the baking dish with tin foil and bake for 30 minutes. Remove the foil and bake for another 25-30 minutes.
