Happy Friday everyone! I hope you are having a good week. And even if not, at least the weekend is almost here!
I was in a real rush one day and realized that I didn’t have anything prepared for dinner. So I randomly threw some ingredients into my slow cooker and headed out the door. Well it turns out the dish was actually really good! So good that I have made it a few more times and decided it was time to share it on the blog. I wish I could say that this happened with every recipe that I throw together but unfortunately this is not the case. For every recipe that makes it to the blog there are at least as mainly failures. So goes life as a food blogger.
On a totally unrelated note do any of you live in Boston or have you spent any time there? I will be heading there next week for a conference and I have never been there before. I would love to visit Harvard if I have time but beyond that I am open to suggestions. Any paleo friendly restaurants you would recommend? Or shopping destinations I should check out? Museums that are good? Seriously I am open to your ideas!
And since I will be in the States I plan on stocking up on a few precious food items that I can’t get here at home like Kerrygold butter, Great Lakes Grassfed Gelatin, Epic Bars and hopefully a few new things. I always love heading to Whole Foods when I am in the U.S and wandering the isles looking for safe foods that I can try. I really wish Whole Foods would come to Calgary. I am like a kid in a candy store in that place. It makes me so happy! I actually booked the apartment that I did because it is only a few blocks from Whole Foods. Yep I am going to be eating well on this trip my friends!
I am also really looking forward to catching up on some sleep while I am away. All this studying on top of working is starting to take it’s toll I am afraid. I am already counting down to the days when I write my exams in the spring and life will finally get a bit easier again. It seems so far away, yet scarily close at the same time. Is that even a word? Scarily? The spell check isn’t getting angry red at me so maybe it is? Who knew?!

Paleo Curried Lemon Coconut Chicken
This came about when I took whatever I could find in the fridge and threw it in the slow cooker and went on with my day!
Ingredients
- 1 can full fat coconut milk
- 1 lemon, for zest and juice equivalent to 1/4 cup lemon juice
- 1 tbsp curry spice
- 1/2 tsp sea salt
- 1 tsp turmeric
- 6 chicken breasts or thighs
Instructions

Turn your slow cooker onto high heat

Add all the ingredients to the slow cooker

Cook for 4 hours
-
Serve and enjoy!

Serve over rice, cauliflower, zoodles, whatever strikes your fancy.

I am at East Tennessee State. My husband,Chris, is in the IM program here. I just put this recipe in the crock pot after getting some yummy fresh market chicken yesterday! I hope it looks as good as your pictures!!Oh and do not feel bad the cells all look the same to us for a while too. I guess that is why it is 4 years haha! 🙂

Do you slice the chicken breasts before or after you cook them?
No I just throw them in whole and then break them apart when it's done (they are so tender they just shred). Either should work though
Depending on our grocery store choice the size of chicken breasts can vary greatly. Do you know approximate weight of the chicken? Also, are we talking boneless chicken? Can it be cooked longer on Low heat setting?

Hi Melissa! I have used chicken breasts of varying sizes for this recipe without having to change the recipe at all. I am not sure as to the weight of the breasts I have used but I would say they were medium sized (ie. Not the gigantic hormone fed ones). I used bone-in breasts for mine, but I am sure boneless would also work. I have not tried cooking this recipe on low heat but if you do I would suggest trying for 6-8 hours instead.

do you think it would be good to add snap peas/brocolli/carrots or other veggies into the slow cooker? or better made separate, then mixed in?
Hey Mary! Either should work. You could definitely add them to the slow cooker. It all depends how well cooked you want them. I would suggest adding them in the last 1-2 hours or so if you do want to try adding them to the mix, they will just be more cooked than if you add them separately at the end. Hope that helps!
How do you modify this recipe for the instant pot?
I'm not sure I've never made it in the instapot. Good luck if you try it!
