You can eat these Paleo Cashew Coconut Chocolate Chip Cookies as a dessert, snack, or maybe even for breakfast (I won’t tell I promise). 

Well friends I hate to say it but summer is almost over. It makes me so, so sad. I just got back from my last vacation of the summer and it’s back to work as usual for me tomorrow. So I am cheering myself up with these Paleo Cashew Coconut Chocolate Chip Cookies. Because a little chocolate always makes me feel better. Especially when it comes in the form of a paleo chocolate chip cookie.

As I mentioned I just got back from vacation. I know, again! This summer has been pretty great for me. I chose to take quite a bit of time off. This is the first time in over 10 years that I haven’t had to spend my summer studying or working. You might recall that last summer I was madly cramming for my rheumatology exams and the summer before that was spent studying for my internal medicine exams. Needless to say it was about time that I actually got to enjoy some time off during the summer. And while I will make very little money for taking all that time off, I don’t even care (remember that as doctors we don’t get any paid time off). The rest and relaxation was totally worth it.

I again escaped to my parents place in the Okanagon by the lake. And as always it was amazing. Except for the few days when the smoke from the neighbouring fires was so great that I could barely even go outside. It was pretty crazy. Think walking into a haze that smells like campfire and immediately makes your eyes water and irritates your throat so much that you start to cough. Ya it was lovely. But luckily it was only a couple days that were that bad. The rest of the time the weather was amazing and I spent a lot of time (as usual) laying by the pool, reading and relaxing. I read 4 books on this trip but a couple weren’t that great so I won’t even mention them. But two that I really liked included:

The Lightkeeper’s Daughters

The Invention of Wings

If you are looking for a good read I would highly recommend both of those books. Of the two, The Invention of Wings was definitely my favourite but The Lightkeeper’s Daughters took place in Thunder Bay where I used to have a cabin so there are some nostalgic memories associated with that one for me.

I’ve also been busy watching the US Open all weekend. Man those athletes are just incredible. Tennis is one of those sports that I wish I had played more of when I was younger. I took lessons when I was about 12 or 13 but other than that didn’t get a lot of exposure to the sport. I was too busy swimming and playing basketball, but now it is one of those sports that I do love to watch and play. It might be time to take some lessons again and try to find some people in Calgary to play with. I used to play infrequently with my father, but now that he is retired and off travelling around the world half the time he is just no longer a reliable opponent. Some days (ok many days) I wish I could be retired right about now. How amazing would it be to spend your time travelling the world and not worrying about work obligations? So amazing right? Retired at 31 years old. Sounds good to me. Yes, a girl can only dream.

But these Paleo Cashew Coconut Chocolate Chip Cookies! Shall we talk about them for a moment? Don’t they look amazing? Not to toot my own horn or anything but these did not last long in our house. At all. We brought them as road trip snacks on our drive out to BC for vacation and inhaled almost all of them during that drive. Because nothing makes me hungrier than long road trips. Anyone else? I think it’s the boredom of driving. I am just not one of those people that loves road trips. I can think of almost nothing worse than spending hours upon hours in the car. Gross. But these cookies might be my favourite paleo cookie I ever created. I have a few others on the blog including my Paleo Chocolate Hazelnut Fudge Cookies, Paleo Orange Blossom Cookies and Paleo Raspberry Thumbprint Cookies but I still think these are my new favourite…

These Paleo Cashew Coconut Chocolate Chips Cookies not only taste amazing but they are also super easy to make. Throw everything into your food processor (this is the one I use and love) and let it do the work for you. They come together in just minutes and will satisfy any chocolate cravings that you might have. Plus there is only a quarter cup of sweetener in these. Amazing right? I think so anyways. And of course these are grain free, gluten free and dairy free as always. I am pretty sure you are going to like these. Like 99.9% sure.
