Mermaid Kombucha Lemonade (Paleo, Vegan)

Mermaid Kombucha Lemonade is going to become your new favourite summer drink. Your kids will love the fun green color of this Mermaid Kombucha Lemonade and you will love that they will be filling their bellies with healthy, nourishing ingredients every time they take a sip of this Mermaid Kombucha Lemonade. 

Mermaid Kombucha Lemonade. That’s what we are sipping on today. This has officially become my new favourite drink. A little sweet, a lot refreshing and filled with all sorts of healthy ingredients. Truth be told I have had my jar of spirulina powder sitting on the shelf for months and I decided it was finally time to put that amazing ingredient to use. Plus look how pretty the spirulina makes this drink?

Summer time. Also known as my favourite season. Summer is the time for outdoor runs, patio drinks, lake vacations, flip flops and breezy summer dresses. It is my goal to be able to live in a place one day that has summer type weather all year round. It’s amazing how much better I feel surrounded by sunshine and heat. If I never have to put on another pair of socks (except to work out of course) I will be one happy girl.

In a couple weeks I will be heading out to my parents place in the Okanagan valley for 2 weeks of vacation. I plan on spending it next to the pool (or lake) with a good book in hand, a drink by my side, in my bikini soaking up that vitamin D. Of course I will also be coating myself in my favourite safe sunscreen (you can check it out here) to protect my skin from burning, because even though we all need natural vitamin D exposure, as you all know, too much sun can lead to skin cancer. And as a pale blonde girl who has had my fair share of burns when I was younger (trust me I wish I had listened to my parents better when I was growing up – but you know how teenagers are) I am trying to avoid any further sun damage. Just remember that when you are choosing a sunscreen, the only active ingredient that you should be using is zinc oxide. Truth be told I have been feeling pretty burnt out recently. I have have had very little down time between my regular job, the blog, and my Beautycounter business. Now, don’t get me wrong, I am grateful for all of these opportunities and I am so thrilled to watch my Beautycounter business grow but it just means that my evenings and weekends have mostly been spent working, working, working rather than relaxing.  So I will be using the 2 weeks of vacation to recharge my batteries, catch up on sleep, get in some good workouts and read as many books as I can!

So what does this Mermaid Kombucha Lemonade have in common with mermaids? Well really nothing other than the colour… I am not really sure why I decided to name it that but I did. And I think it has a nice little ring to it don’t you?

The Mermaid Kombucha Lemonade that I am sharing with you today is packed with some nutritious ingredients like spirulina, kombucha, ginger and raw, local honey. Truth me told I have had a jar of spirulina powder sitting on my shelf for months and haven’t known what to do with it. If you aren’t familiar with spirulina, it is actually an algae that grows naturally in oceans and salty lakes in subtropical climates. It contains high levels of vitamins and minerals including calcium, niacin, potassium, magnesium, B vitamins and iron. It is also a great source of protein, with protein making up about 60- 70% of Spirulina’s dry weight. However, I wouldn’t rely on it as a protein source, as you would need to be consuming very large amounts of it for it to account for any significant percent of your daily protein intake. Sprirulina is also high in antioxidants and some evidence shows that it may be beneficial for cholesterol and triglyceride levels (reference) as well as lowering blood pressure (reference).

This Mermaid Kombucha Lemonade isn’t too sweet (I don’t like my lemonade too sweet) but is so, so refreshing and will be the perfect drink to sip on all summer long. I will be enjoying mine by the pool when I head to BC in a couple weeks. I can’t wait!

Mermaid Kombucha Lemonade

Ingredients

  • 1 bottle GT's Original Kombucha or make your own
  • 2 cups filtered water
  • 1 cup freshly squeezed lemon juice
  • 4 tbsp honey or maple syrup choose local, raw honey or grade c/number 3 maple syrup to maximize the nutritional value
  • 1-2 tbsp spirulina powder the more you put in the darker the color will be
  • 1/2 - 1 tsp powdered ginger

Instructions

  1. Place all of the ingredients into your Vitamix Blender or other high speed blender

  2. Blend until smooth

  3. Serve and enjoy!

Recipe Notes

You can omit the spirulina, but the drink won't be mermaid colored.
