Yes these Paleo Berry Coconut Waffles are blue. It's because they have berries in them! So don't let the unusual colour scare you. Because they taste delicious I promise. Plus I bet your kids will love eating blue waffles. Anything to make meal time fun right? And even if you don't have any kids running around at home (like in my case) there is nothing like your family members seeing a blue waffle thrown on their plate to start up a conversation.

You know what is the worst? Car troubles. I hate dealing with car issues. And this last week I have been dealing with a lot. It's not fun at all. So a couple weeks ago, just as I was getting to spin class, the little red light of doom started flashing in my car (you know, the one that when you look it up in the manual it basically tells you that if you don't pull over immediately you are going to implode? ya that one). So I parked my car and went to spin, hoping it would just magically fix itself after I was done with spin class (yes this is my general approach to car problems).

Well, like most things in life, of course that didn't work. I was only able to drive my car a couple of kilometres before that evil light started flashing again. So long story short I ended up having to get my car towed to the mechanic. Not the end of the world right? So I went and got my car last Friday, payed my almost $900 bill and went on my merry way. Well, not 10 minutes into my drive did that same evil little light start going off again. What the hell? (There were actually worse words coming out of my mouth at that point trust me but I will spare you from my potty mouth). So I called my mechanic back and they sent a tow truck to yet again come rescue me.

So my car is now back in the shop, and they are still trying to figure out what exactly is going wrong. I guess that's what I get for continuing to drive a 15 year old car. But I just love that thing! I am one of those rare people that loves driving a standard car, and it is just so hard to find a good replacement these days. Driving a standard is a dieing art. So if any of you out there know of a decent vehicle that comes in standard (and ideally 4-wheel drive- yes that's the really tricky part) please send me your suggestions! Because my trusted little Jetta is starting to fail me.

Ok, but on to these Paleo Berry Coconut Waffles. I hope the photos have you intrigued. I don't really know what inspired this recipe to be honest, other than the fact that I had raspberries in the fridge that needed to be used. Sometimes that's all it takes to inspire a recipe. Ingredients in the fridge that are just patiently waiting to be made into something delicious.

Ever since I got a waffle maker I have been obsessed with making waffles. They are just so fun to make! So much funner than pancakes if you ask me. So far I have only been making sweet waffles but next on my list is to create a nice savoury waffle for you guys. I'll make it happen soon, trust me. But anyways, these Paleo Berry Coconut Waffles taste so good and are mainly sweetened with fruit and coconut milk so they really are pretty darn healthy. They also have some other really beneficial ingredients ike coconut flour, coconut oil, pasture raised eggs and local honey. Yes, tasty and healthy all in one! I topped mine with some maple syrup but I have also added coconut whipped cream since these photos were taken and if you ask me that tastes even better. I also threw some cacao nibs on mine for a little extra crunch, because I personally love it when food has a crunchy texture. It's just so much more satisfying! Right? Anyone else?

Paleo Berry Coconut Waffles (Grain Free, Gluten Free, Dairy Free)

Paleo Berry Coconut Pancakes Recipe

 

Ingredients

1/2 cup coconut flour (this is my favourite brand)

1/2 cup tapioca flour (I use this kind)

1 tsp baking soda (I use this kind)

pinch sea salt

1/2 cup full fat coconut milk (this brand is what I use because it has no additives and comes in a BPA free can)

1/4 cup melted coconut oil (this brand is my favourite

3 TBSP water

2 TBSP honey or maple syrup (remember to use raw, local honey or grade C maple syrup for the health benefits)

1 tsp organic vanilla extract

3 eggs (pasture raised if possible)

1 cup fresh raspberries

 

Directions

1. Turn your waffle iron on (this is the one that I use and love)

2. In a large mixing bowl combine the dry ingredients

3. Add the wet ingredients and blend well with a pastry blender or spoon

4. Add the batter to the waffle iron (I added about 3-4 TBSP per waffle) 

5. Cook until done (mine took 6-7 minutes - but different waffle irons may have different cooking times) 

6. Remove from the waffle iron

7. Serve and enjoy!
