Slow Cooker Apple Rosemary Pork Roast (Whole 30, SCD, GAPS, AIP, WAPF)

Hi everyone! I hope you had a good weekend! 

For my American readers, how was your Thanksgiving? Did you eat your weight's worth in delicious food? I hope so! That is what the holidays are all about after all. Well that and spending time with family and giving thanks of course. But back to food (I am a food blogger after all) - What was on your Thanksgiving menu? Was it paleo friendly? I always love getting ideas from other people's holiday dishes. 

Now even though it wasn't a holiday here in Canada we still got to enjoy some Black Friday Deals. It has only been in the last couple years that we Canadians have been able to take advantage of this American tradition, and the clothes addict in me totally loves it. I may have ordered a few things online… I am such a sucker for sales - Those deals suck me in every time! 

Can you believe that it is already December?? Christmas is less than a month away! But that means there will be more turkey in our lives in the not too distant future. My mouth is watering already. 

And speaking of Christmas… now that it is officially December that means it is time to bust out the Christmas music! Back when I was a young-in and still doing my undergrad degree I had a roommate who wouldn't let me play Christmas music until December hit. And for some reason that rule has stuck with me (thanks Erika!). One of my favourite yearly traditions is decorating the tree while listening to Christmas music. Oh and baking. Of course baking. I don't think I could call myself a food blogger if I didn't enjoy making Christmas treats. I have a few ideas for some holiday dessert recipes that I hope to post in the next few weeks so stay tuned… 

Ok but now back to this recipe. I am pretty excited about this Slow Cooker Apple Rosemary Pork Roast. It might be my new favourite meat dish. I know, I know that is saying a lot. But trust me when I say that this one is good. Mouth watering good. Somehow the combination of pork and apples just belong together. And throw in a few spices for good measure and YUM! Plus this is ridiculously easy to make because it is cooked in the slow cooker. I cannot sing enough praise for that little thing. I truly believe that every kitchen should have one. I use mine at least once a week. If you don't already have one I highly suggest you add it to your Christmas list. Stat. Man I hate that word. Stat. Brings back too many terrible memories from nights on call at the hospital… 

Anyways this is the slow cooker I use if you are interested.

Ingredients

1 ethically raised pork shoulder roast (buy here) - mine was about 3 lbs

1 cup bone broth (make your own or buy it here

6 sprigs fresh rosemary

Basil leaves from 4 sprigs

1 TBSP chopped chives

1/2 tsp sea salt

1/4 tsp ground black pepper (omit for AIP) 

3 organic Pink Lady apples, chopped (I didn't peal mine but you can)

 

Directions

1. Turn your slow cooker onto low heat and all the ingredients

2. Cook on low for 8-10 hours

3. Serve and enjoy!
