Chocolate ice cream. That is one thing I thought I had given up forever when I switched to the paleo diet. Giving up dairy was definitely not easy, but the health benefits I have seen from doing so have been totally worth it. However, I still miss ice cream from time to time. Especially during the summer when it is so hot outside. So after some trial and error I am pleased to say that I have managed to create a Paleo Chocolate Ice Cream recipe that I am pretty darn happy about.
So you may or may have not noticed that I missed posting last week. I do my best to post something new on the blog every week. But, I was on vacation last week, and I made the conscious decision not to post. You see, I have been burning the candle at both ends for a while now. So I decided it was time I start listening to my own advice and take a little time for myself, to relax and simply enjoy my vacation. In other words, to take a little time for my own self care. Because it’s like I always say, self care isn’t selfish, it’s necessary.
My vacation was pretty darn wonderful. Think warm weather, outdoor workouts, lots of books, farmer’s market trips, pool time and time with my family. The only downside was all the smoke. There are so many forest fires in BC right now it’s crazy. My first week was really nice and smoke free, but for the second week it was pretty bad. And the worst part? Most of the forest fires that are burning are actually human caused. From people throwing their cigarette buts out the window. How disgusting is that? It’s one thing to be smoking in the first place, but to be so inconsiderate that you can’t even properly dispose of your cigarettes? Honestly I will never understand how selfish and disrespectful some people can be. I heard that it costs about 8 million dollars a day to fight those fires. Money that could be spent on so many other, better things if only people weren’t so darn inconsiderate. Grr! It really does make my blood boil.
I mentioned that I read a lot of books on my vacation. That’s one of my favourite things about vacation time: getting the chance to lose myself in so many good books. On this trip I read:
Beartown – This is probably one of the best and well written books I have ever read. It made me cry, laugh and I could barely put it down. I have just ordered three more books by the same author and can’t wait for them to arrive
The Lost Child – This true story was another amazing read. I had actually read it about 10 years ago but had forgotten most of it so read it again. I think it was even better now that I am older and understand a bit more.
The Colour of Our Sky – This one was good, but definitely not as good as the two I previously mentioned.
Okay, recipe time! It’s a good one this week too. Paleo Chocolate Ice Cream. Not only does this taste amazing but it is super easy to make. Just throw everything into your Vitamix, blend, and then put it in the freezer for a couple hours. That’s it, that’s all! It also contains one of my favourite super foods. Grassfed gelatin. Grassfed gelatin is great for so many things including improving the health of your gut, nails, hair and skin. I personally only use and recommend the Vital Proteins brand because of its superior sourcing of ingredients. You really want to make sure you are avoiding the typical gelatin you would find in the grocery store. That gelatin comes from animals that are fed all sorts of toxins and nasty ingredients. Meaning that the gelatin is not only nutritionally poor, but could actually be quite dangerous for you.
I personally love chocolate ice cream. Before I went paleo I used to eat it all the time. Seriously all the time. But in order to improve my health I was willing to give it up. And I did for 6 years. Yes 6 years. But no longer my friends. This recipe has changed all of that. I don’t know why it took me so long to try and make a Paleo Chocolate Ice Cream recipe but it did. I sure hope you like this one as much as I do. Not only is it paleo but it’s also safe for the GAPS diet and doesn’t contain any refined sugars. Enjoy!

Paleo Chocolate Ice Cream Recipe (GAPS, Dairy Free, No Refined Sugar)
2 1/2 cups full fat coconut milk (I love this brand because it has no emulsifiers or other added yuckies)
1/2 cup coconut manna (buy here)
1/4 cup honey (always buy local and non pasteurized to get the maximum health benefits)
1 TBSP organic vanilla extract (buy here)
1/3 cup organic cacao powder (I use this kind)
2 scoops Vital Proteins Collagen Peptides
pinch sea salt
2. Blend until smooth
3. Pour into a freezer safe dish (I used a bread pan)
4. Place the dish in the freezer for 1.5 – 2 hours (depending on how soft you like your ice cream)
5. Serve and enjoy!
Prep Time: 5 minutes
Note: You can store this in the fridge or freezer. I actually prefer the texture when it is stored in the fridge but you may prefer it in the freezer.
